The Greenhouse Health Food Eatery
Mark Korthuis’s varsity soccer-playing days might be behind him (his legendary tenure earned him several Canada West All-Star honours and a spot on the Golden Bears Wall of Fame), but he hasn’t stopped fuelling him- self like an athlete. Thankfully for Korthuis, he can always go to the Greenhouse Eatery when he’s craving something that’s rich, flavourful — and energizing.
“Their tagline is ‘80 per cent healthy and 20 per cent naughty,’” says Korthuis, describing the popular eatery. “I coach both of my kids’ soccer [teams] and have a pretty busy work life, so ensuring that I have a healthy diet is really helpful to keep my energy levels up
and make sure that I’m attending to all the responsibilities that I have day to day.”
And whether the task is seizing the work day or competing at the highest level, Korthuis is in good company when it comes to the fellow top performers who rely on the Greenhouse Eatery.
“I would often see Oilers players like Connor McDavid eating in there beside me,
so I always thought, if it’s good enough for Connor McDavid, it should be good enough for a guy like me.”
Korthuis’s personal favourite is the You
Jerk Salad, which is made with coconut lime vinaigrette, spinach, mangoes, carrots, cranberries, Feta and authentic jerk chicken, all inspired by the owners’ Caribbean roots. The Greenhouse Eatery’s premade meals also mean that Korthuis can always have a delicious and healthy option, whether he’s at work, play or anywhere in between. — TOM NDEKEZI
