With a vibe that’s decidedly ’80s, Spilt celebrates mocktail culture

THE WORLD IS FILLED WITH NON-ALCOHOLIC BEER that “tastes just like the real thing!” There are mocktails that attempt to recreate the flavours of Old Fashioneds, Negronis and Martinis. There is dealcoholized wine.
And, while the selection is a lot better than it used to be, a lot of it, well, flat out sucks. When you’re basing your flavour profiles on deceit — trying to trick the consumer with fake this and fake that — you’re in a bad place.
Instead, why not make mocktails from scratch, with fresh ideas and flavours? The world doesn’t need a de-alcoholized Old Fashioned, but it could use an inventive and original non-alcoholic drink.
