Traditional, thin crust, Chicago, Neapolitan and New York — Edmonton has all the standard pizza styles. A the local pizza war wages, Edmontonians keep enjoying the delicious spoils. But this summer, a new front opened up on the city’s north side: Big Bite Pizza & Donair, offering Detroit-style pizza using many local ingredients. Detroit style means square, with Wisconsin brick cheese spread to the very edges of the pan, yielding a caramelized cheese perimeter where bread crust would normally be. We tried the traditional donair pizza with pepperoni. A small is more than enough lunch for two people, and the chilli-infused, Mike’s Hot Honey blends beautifully with the sweet donair sauce. The Detroit-style, focaccia-like bread is crispy on the outside, light and airy in the middle and, once again, the crust is caramelizedcheese.
