What sets Plume apart is its commitment to being a high-end mixology bar, with a clear depth of craft behind each drink. The bar’s team of mixologists — recruited from around the world — brings international influence to a program rooted in precision and experimentation. Techniques such as fat washing, and milk clarification, and complex infusions transform familiar spirits into something entirely new.
“A lot of our cocktails take days to prepare,” general manager Matt Lyon explains. “We’ll create the infusions, cook them overnight, and then spend hours clarifying the mixture so you’re left with these incredibly smooth, layered flavour profiles you’re not going to find anywhere else.”
The menu currently features eight signature cocktails, carefully curated to appeal to a wide range of palates. Two drinks fall into each flavour profile category, ensuring there’s something for everyone.
Among the standouts is the Vanis Kiss, a ginger-forward cocktail that balances sweetness with a crisp bite of high-quality ginger beer. Another crowd favourite is the Popcorn Old Fashioned that uses house-made popcorn syrup to introduce a subtle buttery depth. For something more adventurous, the bar’s cigar-infused Manhattan delivers earthy tobacco notes balanced with cacao-infused vermouth.
Plume’s philosophy goes beyond the glass. Lyon emphasizes that the venue’s mission is about hospitality as much as mixology.
“You can get service anywhere,” he says. “Hospitality is different. Hospitality is about creating a moment — a memory.”
From the time guests step inside, the space reflects that ethos. The design blends classic elegance with modern flair: low lighting, a warm atmosphere and live music on weekends create what Lyon describes as a “classic-meets-modern vibe.” Dressing to impress is encouraged, to give people a reason to dress up.
