One of the best things about brunch is the fancy bubbly drinks. Mimosas go down oh-so-well before your chicken and waffles, or eggs Benedict. This bubbly drink can help brighten up your brunch at home — even if all you’re doing is making pancakes using a mix out of a box.

Find a fancy glass; a coupe glass is recommended but you can also use a really tall flute. Or, really, who are we to judge your choice of glassware?
What you need is:
- 4 oz. cava
- 3 oz. pink port
- two or three dashes orange bitters
- an orange twist (but, after some experimentation, we liked using an orange section)
This is an easy cocktail to build. Start with the bitters, then add the cava and pink port to a 4:3 ratio. There is a real fruitiness to the resulting drink, and, yes, it goes down as easily as you may think. So, be careful out there!
