Heather Thomson, VP of Strategy, Research and Engagement at the Edmonton Chamber of Commerce, has a deep-seated love for Bua Thai that goes beyond mere culinary appreciation. Her childhood is woven into the flavours of its chicken satay, a dish that has been a constant companion throughout her life.
“When I was really little, we’d go there all the time. And I’m obsessed with their chicken satays, and always have been,” she recalls. For Thomson, these skewers of tender, grilled chicken, served with a delightful peanut sauce, were more than just a meal; they were a gateway to her love for Thai cuisine. “If I had to pick one food to take with me to an island for the rest of life it would be Thai food, but specifically Bua Thai,” she says.
Even during challenging times, such as her parents’ separation, Bua Thai remained a comforting constant. “When my parents split up, my mom was in Vancouver. Every single time she came back to Edmonton, we would go to Bua Thai. So it was kind of like this extra layer of like, this place is really special,” says Thomson.
Thomson’s fondness for Bua Thai extends to her adult life as well. “That is still my birthday place. It’s non-negotiable.” She even considers it a great spot for lunch meetings, because of its quiet ambiance.
For Thomson, Bua Thai’s chicken satay is not just a dish; it’s a cherished memory, a family tradition, and a staple in her culinary repertoire.
