I love tacos. I also love quesadillas. But, I was stumped when I saw Taco Nova had quesabirrias on the menu. To be honest, I had no idea what a quesabirria was until I Googled it and discovered that it’s a heavenly mix of a taco and quesadilla. I quickly ordered some for take-out and went on a quest to find Taco Nova.
Taco Nova is part of Komune, a ghost kitchen concept that also houses three other restaurants (a ghost kitchen is a take-out only concept that prepares well-known dishes). However, Komune is less of a ghost kitchen and more of a food hall now that it’s opened up a dining space. I decided to take my lunch to-go and sent photos to all my friends to make them jealous.
Taco Nova’s quesabirria comes with three seasoned tortillas covered in thick layers of melted cheese, beef, onion and cilantro. I’m guessing the thick layer of cheese is what makes it quesadilla-like, and it was my favourite part. It’s bigger than a taco, stuffed to the max and extra cheesy. The quesabirria is my new favourite food combination. Beware, it’s a messy meal so don’t wear a white shirt and ask for plenty of napkins.
