The beloved Caffé Sole, previously tucked away off 99 Street, has shifted all operations to their new location in the heart of Edmonton City Centre mall. The Mexican-inspired cafe has been serving traditional flavours to Edmonton’s coffee scene since 2018.
To no one’s surprise, this family-owned establishment has made headlines with their churros and signature caffeinated drinks. Their sandwiches have surely left a lasting impression as well, especially their Cured Sammie — layers of salami, soppressata and hot capicollo covered in melted provolone, tucked inside a warm Portuguese roll. Whether you like a classic chicken caesar sandwich or are looking for a breakfast alternative, Caffé Sole’s selections will uplift.
Owner Jerson Reyes loves to innovate, as you will see on his menu. His newest addition: Mexican Pizza. And he did not hesitate to share his recipe with us.
Mexican Pizza Recipe
If you don’t like making your dough from scratch, the Italian Centre has frozen pre-made pizza dough balls that suit this recipe perfectly.
Ingredients
- 10″ pizza crust
- 16 oz can refried beans
- 75g Rey Sol Mexican chorizo
- 100g diced bacon
- 6 – 10 jalapeño slices
- 10 red onion strips
- Mozzarella cheese
Instructions
- Preheat the oven to 250 degrees Celsius.
- Pre-cook the chorizo in a saucepan until brown.
- Spread a thin layer of refried beans over the pizza crust.
- Add the crumbled sausage, diced bacon, jalapeño slices and onion strips.
- Cover all ingredients with cheese.
- Cook until the crust is golden brown.
