The snow is settling in and you’re in the mood for something warm. First you think of take-out, but find yourself shaking your head. Take-out is fine, but it’s the weekend and you feel like cooking. But then you remember: the Lamb Rogan Josh and Naan makes your mouth water just thinking about it.
The rogan josh curry can literally be translated to mean “red passion” in Hindi. And with winter coming in fast, that’s exactly what you need. Hailing from Kashmir and the Himalayan mountains, this curry might look intimidating but trust us; the red is only for colour.
The balance of spices work with the lamb to create a beautiful flavour. And although it goes deliciously well with rice, the real winner is always the naan. A little crispy on the outside and soft on the inside — it’s the perfect accompaniment to the curry. Raita is yogurt which sometimes has chopped vegetables in it, like tomatoes and cucumbers, and is a refreshing addition to any spicy food.
