Sherry Lawler has been searching for the perfect cup of tea for nearly two decades. It all started in her university days when she’d brave the cold walk from her downtown home to campus across the river. She always made sure to bring a Thermos of tea with her since there were no cafes to stop at along the way.
“I was freezing my butt off,” she says. “I needed to bring tea from home to stay warm and to get me through it.”
Today, Sherry’s love of a warm cup of tea is stronger than ever. She and her sister, who loved a good conversation over a cup of tea, founded the Cove Tea Company in an effort to bring high-quality tea blends to Edmontonians. The company now serves up a line of premium loose-leaf teas with ingredients like organic marigolds, rosehips and cucumber.
But Cove Tea’s lineup includes more than just traditional blends. Although she’s a “die-hard” fan of black tea, Lawler also developed a line of tea bombs — similar to a hot chocolate bomb, but with a shell of hard sugar — for those wanting a sweeter cup. As hot water is poured over it, the shell explodes, and the powdered tea inside infuses. The flavour profiles are carefully crafted and, as Lawler says, designed not to be too sweet.
“I don’t like sugar in my tea, unless it’s iced. If I do put sugar in, it’s just to round out the flavours a bit,” she says, “so what I’ve done with a tea bomb is create something special with a balanced flavour.”
