One of the many things that Elizabeth Ho learned from the pandemic is how much people love cookies.
“The most popular item is always an item that evokes some sort of sense of nostalgia,” says Ho, founder of Birdhouse Bakeshop. “I’ve found out, in the last year, that people really love cookies because they are something that probably reminds them of their childhood.”
Ho started Birdhouse Bakeshop out of her home mid-pandemic after she was laid off. She created a business Instagram account and her dainty minimalist cakes, cookies and squares quickly gained popularity.
What sets Birdhouse Bakeshop apart from other bakeries are the unique and experimental flavour profiles Ho creates. Every recipe is created from scratch and Ho gets inspiration from the seasons and the produce available. Most recently she showcased a lemon white chocolate cake with lemon cream, raspberry rose jam and caramelized white chocolate buttercream on her Instagram. Her decorating style is best described as minimal and floral.
“Another thing that is important to me is that I use seasonal, local ingredients and produce to make it as sustainable as possible,” says Ho.
