This take on a gin fizz incorporates tart, spicy flavours that make it the perfect option for those looking for a little something different.
2.0 oz. Tanqueray Rangpur Gin
0.75 oz. kaffir vanilla syrup
0.75 oz. lime juice
1 large egg white or 1 oz. pasteurized egg white
3.0 oz. sparkling water
Dry shake gin, kaffir vanilla syrup, lime and egg white without ice for three seconds to mix all the ingredients. Shake vigorously for one to two minutes to froth egg white, strain into a Collins glass, and add sparkling water to taste.
1 cup white sugar
1 cup water
10 kaffir lime leaves
2 whole pieces allspice
1 stalk fresh lemongrass
1 oz. fresh ginger
of a fresh vanilla pod, or tsp. vanilla extract
Juice of 1 lime
Bring water and sugar to a simmer and turn off heat, add all other ingredients and steep overnight in a fridge.
