Edmonton loves doughnuts, and the more extreme, the better.
On my latest trip to Alberta Avenue, I stumbled across Corpuz Bakeshop. There’s a teddybear in the logo, and pictures of doughnuts in the window. So, I was intrigued. Is there another entrant into the extreme-doughnut category?
I was greeted by two exceptionally cheery people, who told me this spot opened in May, and has doughnuts like I’d never tasted before. And then I looked down in the display case, and saw berries and chocolate bars and pieces of cake sticking out of doughnuts. There were flavours like Strawberry Polvoron, Thai Pandan Kaya and Raspberry Mascarpone. The doughnuts were almost too beautiful to eat.
The key word in that previous sentence is “almost.”
So I brought four of these beauties back to the office, for a real taste test. And, first off, they’re heavy. As in, you don’t expect a doughnut to be so hefty, and handling a few of these might lead to carpal tunnel. That’s because they’re loaded with so much filling. There’s a great strawberry cream in one. Another is stuffed with dulce de leche. And the Thai Pandan Kaya is filled with a grassy green cream that’s heavy on coconut.
Despite their heft, the brioche doughnuts themselves are not overly sweet. In fact, we were stunned by how subtle they were. Each bite has flavour, but it never becomes cloying. There’s so much balance, here.
And I can’t wait to try another batch of flavours, next time.
