Scott McCord might be a bit sheepish about choosing a well-known spot like Corso 32, but if anything, it’s a testament to the downtown restaurant’s undeniability.
“I know, I know — an easy lay-up for any foodie in YEG, right?” McCord says. “But Daniel Costa has built something in Edmonton that we should all be incredibly proud of on the 103rd block of Jasper Ave with Corso, Uccellino and Bar Bricco.”
Like a lot of his favourite dining moments, McCord’s fondest memory from Corso 32 involves a night out with his wife.
“The first ‘nice’ dinner my wife and I had — when we were both young and struggling to get a foothold in our respective industries — was at Corso 32,” McCord says. “It really opened my young eyes to what Italian food is and what it could potentially be.”
One of the stars of the evening was the whipped ricotta, a house-made goat’s milk cheese that has stayed with McCord ever since.
“The whipped ricotta was the first time a dish has ever reminded me of something, or taken me to another place just on taste alone (in this case, a childhood summer day).”
It’s a memory to savour in more ways than one, and it’s one that McCord has kept coming back to over the course of the pandemic.
“We’ve had some memorable evenings at Corso, Bar Bricco and Uccellino over the years, and their at-home service during the pandemic has allowed us to relive them in our own dining room.”
